Mint is easy to grow and has many uses in the kitchen, around the home, and in your self-care. I enjoy using mint in my treatments for its energizing and uplifting qualities, as well as its positive effect on circulation. Mint tea is an excellent way to enjoy the healing properties of this herb.

Mint tea is naturally caffeine-free, yet has an energizing effect. It increases your metabolism, suppresses appetite, and curbs cravings, which makes it a great ally for weight loss. Mint is also naturally sweet, and can help lower blood sugar levels. Drink mint tea after a meal to aid in digestion. It can even soothe an upset stomach.

Did you know mint has anti-inflammatory properties? This means that it can reduce pain caused by inflammation, even when applied topically as a pure essential oil or when you drink it in a tea.

Mint is a keystone herb for increasing our overall immune system health. Drinking mint tea can help ward off colds and flu, and can even improve hay fever and allergy symptoms.

Mint is extremely easy to grow at home and is best in containers because it spreads readily. You can brew mint tea using fresh or dried leaves. If you want to purchase mint tea, look for organic varieties or loose leaf teas made without synthetic flavours or additives. When you brew a cup, be sure to take in the aroma for an instant mood boost!

Last month, I touched on avocado and its many benefits, plus featured my Goddess Bliss Avocado Crème for the face and neck area (talk about evening bliss! Go to bed with skin feeling its velvety best!) and my homemade Avocado Mango Facial Mask. Continue your self-care by adding avocado to your diet with these simple recipes to spice up your meals. Avocado works wonderfully as a mayo alternative!

I love to use fresh chives and kale from my garden for these recipes. To save prep time, you can whirl chives and kale together in a food processor or chopper for the right consistency.

Creamy Salmon or Tuna Mix
This is great on a brown rice/Kamut cracker, inside a Romaine lettuce leaf or on a bed of salad, or even on top of quinoa. Remember variety is the spice of life!

Ingredients
Can of salmon (or tuna)
Soft avocado half or whole depending how creamy you like it
Fresh chives, finely chopped
A few leaves of kale
1 red pepper, diced
Half lemon, squeezed with juice set aside.

Mash salmon and avocado together, then mix in finely chopped chives and kale, followed by red pepper. Give it a good mix and finish with lemon juice.

I often enjoy this spread on a Kamut cracker topped with a kale leaf to hold the ingredients on top of the cracker. Add in a fresh mixed green salad (from my garden of course!), farm fresh tomatoes, and a olive oil, balsamic and sea salt vinaigrette for a very nutritious lunch.

Egg Surprise

Ingredients
4 cooked organic farm fresh eggs
Chives and parsley, finely chopped
1 avocado
Optional: Chopped dill pickles or olives , celery – be creative; it’s an easy recipe to adjust to suit your taste!

Roughly chop eggs and mix with mashed avocado, add chive parsley mixture, then extras of your choice. Serve topped with a few basil leaves!

This mixture works well on a bed of organic greens, wrapped in a large lettuce leaf or on top of a Kamut cracker. I enjoy eating this on Kamut cracker served with an organic farm fresh chopped tomato and basil salad with olive oil and sea salt or with sliced cucumber to top and on the side plus cherry tomatoes.

Fresh spring daffodils in my garden

This month everything is becoming green and alive, so I invite you to try this simple and refreshing green drink. Have fun improving your health by bringing more greens into your diet… enjoy!

2 cups water
A few handfuls of chopped greens like kale or spinach
Lemon juice from half a lemon
A small thumb tip sized chunk of fresh ginger, peeled
Apple, cored
Banana, peeled
A few pitted dates for sweetness
½ cup coconut almond milk or any plant milk

I make this in a regular blender and start by adding the liquids, then the rest of the ingredients and blending until smooth – usually 4 minutes.

For local readers, Living Soils Farm in Cedar is open on Sundays and starting in May, local farmer’s markets will be open. Let’s support local and organic small businesses and farms. I so appreciate having access to these services.

Island Natural Market in Nanaimo is also one of my favorite places to shop for organic groceries; they have such a variety, their staff is friendly and knowledgeable, prices are competitive and they offer educational seminars at their store. I feel so lucky to have all of this in Nanaimo.

lisa-natural-flavoured-waterThere are many reasons to drink more water every day (just a few at the link) and I wanted to create a fun way to get enough water every day, so I made this recipe. Prepare in the morning and leave in your fridge or take with you to keep hydrated all day long.

2 32 oz mason jars
½ lemon squeezed in each jar
2 frozen strawberries or fresh in each jar
a few lemon slices in each jar
a few sprigs of cilantro in each jar

Gently stir and enjoy the sweet and refreshing flavour.

A simple way to figure out how much water you need to drink a day is to take your body weight, divide by 2 and that will be the amount of ounces you should drink in a day. So if you weigh 120 pounds, you should aim for 60 ounces of water a day, which is almost 8 glasses.

Recently, I’ve been attracted to cilantro. I simply like the taste, but what makes it even more attractive is its health benefits (check out this link for a great video about them).

For a simple way to enjoy it, simply boil a small pot of water and add a handful of chopped cilantro. Allow it to steep for 5 minutes then strain and drink as a tea to assist with digestion.

For something a little bit more involved but definitely easy and worthwhile to make, check out my recipe below.

Organic Nutty Salad
You can make as little or as much of this salad. Toss together these ingredients and serve with my easy frittata.

  • Organic mixed greens
  • Celery, chopped
  • Pumpkin seeds and sunflower seeds
  • Cilantro, chopped
  • Cherry tomatoes, halved
  • Sprinkle of nutritional yeast (learn more about nutritional yeast by clicking here)
  • Simple dressing of extra virgin olive oil and sea salt

Easy Frittata

  • 1 small onion
  • 2 cloves of garlic
  • 1 medium-large organic potato, halved lengthwise then sliced into thin half circles
  • 1 small red pepper, seeded and chopped
  • 4 eggs
  • Handful of chopped cilantro
  • Sprinkle of nutritional yeast

Use organic olive oil or coconut oil or non-stick spray to prepare your pan. Use medium heat to saute onions and garlic a few minutes, then add potato and stir occasionally until brown ~ about 15 minutes, add red pepper. Crack 4 eggs into a deep bowl and whisk together until combined. Pour over potato mixture, turn heat to low and put on low heat, then let cook on low heat for approximately 10 minutes. Sprinkle cilantro and nutritional yeast on top, then slip frittata on a plate and enjoy with your organic nutty green salad.

greens1Here’s a shot of some greens from the local Living Soils Farm. On Sunday, I made a trip out to Cedar to get my greens. Adding bliss to my life is a simple drive to Cedar! I love my greens – this week I picked up arugula, mixed greens, chard and two kinds of kale. We are so blessed to have farmers like Ian and Rachel at Living Soils Farm. They are open every Sunday from 12:00 to 3:00 pm . Get on their email list (livingsoils@hotmail.com) and receive a weekly email from them with what’s available – always freshly picked that day. I love the drive in the country and knowing I am fueling my body with so many organic greens feeding my body bliss, mind bliss and creating beauty bliss!
